Our Blackberry-Ginger Balsamic is wonderfully sweet, pleasingly tart and redolent with the clean, natural flavor of blackberry and ginger. It makes a fantastic dressing or marinade and is divine paired with our Persian Lime Olive Oil. Additional choices may be Eureka Lemon, Blood Orange, Tuscan Herb or Roasted Sesame oil.
BLACKBERRY GINGER SHRIMP
1 1/2 pounds medium shrimp, peeled with tails let on, 1/4 teaspoon salt, 1/8 th teaspoon pepper, 2 tablespoons Loide' Butter Olive Oil, 1 small onion, sliced into wedges, 1/4 cup Loide Blackberry Ginger Balsamic Vinegar, 1/4 cup chicken broth, 1/4 cup cream, 1 tablespoon tomato paste, 1 cup fresh blackberries.
Saute onion in Butter Olive Oil. Add shrimp, salt and pepper, and saute until shrimp just turns pink and is barely done. Remove shrimp and set aside. Add Blackberry Balsamic to pan and simmer over medium high heat until reduced by 1/2. Stir in broth and cream, simmer over medium high heat until reduced by 1/2 again. Add shrimp and heat through. Stir in berries gently and serve. Serves 2-4 .
