Black Cherry Balsamic

SIMPLE BLACK CHERRY REDUCTION

1/4 cup Loide' Black Cherry Balsamic Vinegar

In a small sauce pan bring balsamic to a boil. Once it begins to boil reduce down to a simmer and let it cook down to half, about 15-20 minutes stirring often.  Once reduced to half, let cool for about 15 minutes. Drizzle over fruit and nuts, over cheeses such as Gouda, Swiss, Cheddar, Mozzarella, or over ice cream.

BLACK CHERRY CHICKEN

4 chicken breasts, 1/4 cup Loide' Black Cherry Balsamic Vinegar, 1/4 cup Loide' Chipotle Olive Oil, 1 cup Basmati Rice, 1 1/2 cup water, 3 tablespoons Loide' Chipotle Olive Oli, sea salt.

Whisk together the 1/4 cup Black Cherry Balsamic with the 1/4 cup Chipotle Olive Oil and place in a zip lock bag.  Add chicken.  Marinate overnight in refrigerator.  Remove chicken from marinate and bake the chicken in a 350 degree oven for approximately 30-40 minutes or until 170 degrees on a meat thermometer.  Prepae rice.  Combine with the water, the 1 tablespoon Chipotle Olive Oil and a pinch of sea salt in a medium size pan.  Bring to a boil, cover and simmer for 20 minutes.  Remove from heat keeping it covered for 5 more minutes.  Uncover, fluff and serve with chicken.
