Raspberry Balsamic

This thick, rich, perfectly balanced Balsamic Vinegar, oozes with the natural flavor of fresh, ripe raspberries. Both sweet and tart, it’s perfect tossed with mixed salad greens and a little feta or blue cheese. Also enjoy paired with one of our flavored oils or as a marinade or glaze for pork or chicken. Perk up your balsamic with Pairs well with Chipotle, Eureka Lemon, and Wild Mushroom and Sage Olive OIls, as well as our Roasted Almond and Roasted Walnut OIls. Mix with Strawberry, Blueberry, Peach, Tangerine, or Dark Chocolate Balsamic. Green Chili, Chipotle, Cayenne Chili, Basil, Garlic, Herbes de Provence, Rosemary, Persian Lime, Lemon, Blood Orange, or Mandarin oils.

RASPBERRY CHICKEN BREASTS

4 boneless, skinless chicken breast halves (about 1 lb.), 2 tsp. finely chopped gingerroot, 1/3 cup raspberry preserves,              2 tsp. Raspberry Balsamic

Arrange chicken breast halves, thickest parts to outside edges, in square microwavable dish, 8 x 8 x 2 inches. Sprinkle  with ginger root.  Cover  tightly  and microwave on high 8 to  10 minutes, rotating dish 1/2 turn after 4 minutes, until  juices run clear. Mix preserves and Raspberry Balsamic in 1 cup microwavable measure.  Microwave uncovered on high 30 to 60 seconds or until warm.  Serve over chicken.  Garnish with fresh raspberries if desired.
